This Ginger Glazed Salmon is salmon as simple and delicious as it gets. The sweet and savory glaze also tastes great on tofu or drizzled over vegetables.

Ingredients 

  • ½ cup sake
  • 2 Tbs. reduced-sodium soy sauce
  • 1 Tbs. brown sugar
  • 1 clove garlic, minced
  • 1 2-inch piece ginger, sliced
  • ½ tsp. cornstarch
  • 4 6 oz. skinless center-cut salmon fillets
  • 2 scallions, sliced
  • 1 Tbs. slivered ginger

Instructions

  1. Preheat the oven to 400°F.
  2. In a small pan, whisk together the sake, soy sauce, sugar, garlic, sliced ginger, and cornstarch. Bring to a boil over high heat. Cook until reduced to a syrupy consistency, 3-5 minutes. Strain into a small bowl, extracting as much glaze as possible. Discard the solids. 
  3. Place the fish, skinned side down, on a rimmed, lined baking pan. Spoon the glaze over the fish. Bake until the thinner end of fish flakes easily with a fork, 8-12 minutes. Remove, cover with foil, and let rest for 5 minutes. 
  4. Remove the foil and sprinkle the fish with the scallions and slivered ginger.
